KAPALUA – Dick Holtzman, vice president and managing director of Montage Kapalua Bay, last week announced the appointment of Riko Bartolome as executive chef.

Bartolome will oversee all culinary experiences at Montage Kapalua Bay, including in-room dining, the Sunset Patio and the resort’s new signature restaurant, Cane & Canoe.

With extensive Hawaii experience, Bartolome created a menu at Cane & Canoe inspired by the island’s multicultural heritage, serving modern Hawaiian fare with Asian influences.

“We are excited to welcome Chef Riko Bartolome to our ‘ohana,” said Holtzman. “Chef Bartolome’s focus on island-inspired, fresh local products is the perfect complement to Montage Kapalua Bay. Connecting land, people and food, Chef Bartolome will showcase Hawaii’s diverse cultural influences.”

Known for his signature Asian fusion style, Bartolome graduated from the Culinary Institute of America in Hyde Park, N.Y., and began his career at the Hyatt Regency Aventine in La Jolla, Calif.

Bartolome has led culinary programs at luxury hotels, including the Grand Wailea Maui and Hotel Nikko’s Pangaea, Hotel Del Coronado’s Crown Room, W Hotel, and Asia-Vous, all located in San Diego. During his time at Asia-Vous, the restaurant received international acclaim as one of the top ten restaurants in San Diego.

In 2007, Bartolome returned to Maui, where he worked exclusively as a private chef in Kapalua. Earning the respect of industry peers and critics alike, he has been featured at the annual Maui County Agriculture Festival’s Grand Taste Education and as host chef of Whale Trust Foundation’s annual “Whale Tales” event held in Kapalua.

When not in the kitchen, Bartolome enjoys being active on the water and stand up paddle boarding. He currently resides in Kahana with his wife and two children.
