Pi Artisan Pizzeria Lahaina opens on Aug. 4

LAHAINA – Pi Artisan Pizzeria Lahaina will open its doors on Monday, Aug. 4. The restaurant will offer high-quality Italian food using fresh, local produce and ingredients in a fast, casual and fun environment.

Pi Artisan Pizzeria is located at 900 Front St. in Lahaina on the ocean side of The Outlets of Maui.

The heart of the restaurant is its 8,000-pound kiawe wood-burning oven fired at 800 degrees to produce a crispy, rustic pizza in five minutes. Unlike standard round or rectangular-shaped ovens, Pi Artisan Pizzeria’s oval-shaped pizza oven has dual openings, allowing two persons to use it at the same time.

“Our pizza oven is a massive reservoir of heat, and it is the only one of its kind in Hawaii,” said Bert Noury, managing partner of Pi Artisan Pizzeria.

“The dome height and oven curvatures allow the heat to flow evenly, and the bottom is a little porous to wick away moisture from the dough, creating a crisp pizza.”

Fresh pizza dough, mozzarella cheese, sausages, meatballs, porchetta, sauces and desserts will all be made daily and in-house. Diners will be able to watch the team make these items fresh from the glass-walled dough room.

James Simpliciano of SimpliFresh is leading the recipe creation and procuring the fresh produce and local ingredients for Pi Artisan Pizzeria. He is a trained pastry chef and farmer, overseeing 75 acres of farms on Maui.

Simpliciano has been working with the team, led by Kitchen Manager Mitch Respicio, on the menu offerings, including the recipe for the perfect pizza dough. He will also manage the restaurant’s onsite herb garden.

In addition to pizza, Pi Artisan Pizzeria’s menu includes classic Italian salads, soups, panini, cured meats, artisan cheeses, meatballs, sausages, porchetta and house-made desserts.

The full-service bar will offer handcrafted cocktails, local brews on tap and a selection of wine.

Pi Artisan Pizzeria will open daily at 11 a.m. It will close at 10 p.m. on Sundays through Thursdays and midnight on Fridays and Saturdays.
